However, there are generally two locations that are considered the fastest, most efficient way to farm mole rats: Hillfolk Hotdogs and the surrounding areas of Welch Station.

Hillfolk Hotdogs and Welch Station Can Be the Key to Quick SCORE Challenge Completions in Fallout 76
Any players looking for a quick way to complete the daily or weekly SCORE challenges in Fallout 76 for killing mole rats should look no further than Hillfolk Hotdogs and Welch Station. At both of these real-world-inspired locations in Fallout 76, players can find around 13 mole rats. Since the daily SCORE challenges typically only require 5 kills, either one of these locations is an efficient way to complete this challenge.
At Hillfolk Hotdogs, there are around six mole rats that will spawn as players approach the food truck and the nearby trailer. At Welch Station, the mole rat spawns are a bit more spread out. The first two mole rats here can be found by following the train tracks northwest of the Welch Station fast travel point. West of there, two more mole rats can be found where the main road in Welch turns into a cliff that overlooks glowing green ultracite crystals. The last three mole rats are a unique breed known as ultramites, which will spawn where the ultracite crystals are growing.
If the mole rats at either of these locations here are already dead, players can get them to respawn by quitting to the main menu and joining a different server. So, while there are several other locations where mole rats can spawn, such as Green Country Lodge and Transmission Station 1AT-U03, far more tend to spawn at Hillfolk Hotdog and Welch Station, arguably making these locations the most efficient mole rat hunting grounds.

Aside from completing a daily or weekly SCORE challenge, another reason why players might want to visit Hillfolk Hotdogs and Welch Station to hunt down some mole rats is for some convenient food buffs in Fallout 76. Admittedly, the different consumables that players can cook with mole rat meat are far from being the best at the respective buffs they provide, but what makes these dishes worthwhile, specifically mole rat chunks, is that they are relatively cheap to craft.
So, while the +1 Strength from eating mole rat chunks only provides a negligible buff to players’ melee damage and inventory carry weight in Fallout 76, the benefit of cooking this dish is that it can be used as a low-cost way to keep players’ hunger meter fully satisfied. In turn, this will allow players to take full advantage of the Overeater and Gourmand legendary armor and weapon mods, among other well-fed passive buffs that more than justify the time it takes to kill a few mole rats and cook their meat.
